Pasta with avocado "cream" sauce

Yum yum yum yum YUM!

I had some avocados that were almost too ripe after the Easter weekend. I’ve been dying to do something like this for a while now.

This concoction was amazing!

Ingredients
1 pkg spaghetti noodles
2 avocados
1 tbsp minced garlic
1 tbsp lemon juice
2-3 tbsp extra virgin olive oil 
Salt and pepper to taste 
1 large chicken breast (optional, but would be pretty rich without it)
Instructions
  1. Cook pasta according to directions (reserve pasta water in case your sauce needs thinning).
  2. Into a food processor add avocado, garlic, lemon juice, and olive oil.
  3. Mix to smooth consistence and add salt and pepper to taste.
  4. Spoon mixture into warm pasta and add reserved pasta sauce as needed to encourage sauce to coat pasta evenly.
  5. Grill chicken and serve over pasta.

First, cut avocados and remove the seed. I use the knife trick and knock the blade into the seed, twist, and remove.

Remove the avocado from the outer layer. I usually slice the knife through the flesh, breaking it into cubes but leaving the akin intact. I then scoop the cubes out with a spoon.

Add avocado directly to the food processor.

If you have fresh garlic or lemons – use them! I didn’t. Add 1 tbsp of minced garlic and 1 tbsp of lemon juice. I added just under 1 tbsp of lemon juice because I’m a little scared of lemon. I made a pasta dish not too long ago with lemon and I added too much and it was pretty much beyond help – yuck! I didn’t taste the lemon too much in this dish so I think it may be safe to add more.

Next add 2 tbsp of olive oil. I started with two and could have stopped there but I added more because I thought it might need it to smooth things out more. Next time I think I’ll try too and add more pasta water to thin it out if needed.

Add salt and pepper to taste. I added it here so I could taste the mixture before deciding how much it needed.

Add the sauce to the warm pasta and add any pasta water to make sure it coats evenly. I just lightly strained most of the water out but kept the pasta pretty wet.

Serve pasta topped with chicken and enjoy!

It is so delicious and rich – I definitely didn’t need all that I piled in my bowl but it was sooo good!
