February is National Hot Breakfast Month. As most busy moms know, breakfast for dinner is a great way to please the kids without requiring much effort. In our house breakfast for dinner is a special treat. The kids don’t have to know that it’s easy for Mom.

There are a million different ways to make your own overnight oats, but this is the recipe I used the first time I tried them and it has been love ever since. I’ve never been an oatmeal fan, but this is like a dessert for breakfast and the consistence is a bit thinner which is why I love it so much. The sweetness of the banana and peanut butter, with the touch of cinnamon – delicious!

I’m sharing a tasty recipe that I won’t be eating today because it’s Ash Wednesday, but these Ham Asparagus & Egg White Cups are delicious! They’re also a great way to make a breakfast ahead of time, keep in the fridge or freeze, and have something on hand to grab when you’re short on time in the morning.
This is a way better option than grabbing a protein bar on the go, or *gasp* skipping all together!
I mean, why not? It’s delicious and there isn’t a much better combination than shrimp, garlic, and eggs. So, when I was trying to figure out what to make for breakfast on Christmas morning I had a eureka moment. I’d combine my egg muffins with my garlicky shrimp and eggs and we would have easy Fancy Mini Shrimp Frittatas.
Whew! The holidays are over and the New Year is beginning!
Does anyone else feel like they just ran a marathon?
I feel like we’ve been running a race since Halloween! We left for Florida the first week of November, I attending a conference in Orlando, we spent a couple weeks helping out my grandparents with a remodel in another part of Florida, returned home on Thanksgiving Day, started the whirlwind of Christmas prep and shopping, had Kohls grant my wellness wish (details coming this week, I promise!) and film the family, hosted Christmas with my husband’s family, and completed all the Christmas festivities with my family and ended with a weekend at the cabin.
Wow! Now wonder!
I do have to give myself a bit of a pat on the back, though. After the craziness of November and the first week or two of December, I did finally remember to take care of myself around Christmas and this past weekend. Here are some things that helped me survive and some that I would like to continue to remember in the New Year.
My husband is a creature of habit. Each day, he warms up a breakfast sandwich before heading off to work. We started out buying Jimmy Dean Breakfast Sandwiches and scaled back to Great Value Breakfast Sandwiches to save a bit of money, but I was buying these things all the time! I decided I could save money and a few trips to the store by making our own homemade breakfast muffins to freeze and reheat.
I now spend some time one day to make enough breakfast sandwiches and burritos to last more than a month!
