***Update: I’m still making these sandwiches every couple weeks and Hubby still loves them! Thanks to The advice of DesignGran, I decided to cut the eggs with a cup so they were the perfect size for the muffins. I had considered the idea before but didn’t want to deal with finding a use for all the excess. Well, I finally found a use for them! Make Ahead Frozen Breakfast Sandwiches Step-by-Step Video!

 

 
 

My husband heats up a breakfast sandwich before work every day. He used to eat the Jimmy Dean sandwiches and I convinced him to switch to Great Value (Walmart) to save a little money. Since I’ve been home I’ve been making them for him.

Here are the basic ingredients. I prefer to slice from a block of cheese when I can but he buys the slices and doesn’t seem to have a preference. The sausages pictured are from Aldi. We usually get the Great value Spicy patties, but these were a bit cheaper so we’re trying them out.

I have to show you my favorite pan!

This is the first pan we got with these ripples. We have since bought many of a related brand – USA Pans – in different shapes and sizes and I LOVE it!! The USA half sheet pan is what I use all the time, and it’s priced really well. All of the USA pans we’ve tried are amazing!

This thing is amazing!  I’ve done BBQ ribs on it and left everything to set overnight and all it needed was a quick rinse and light scrub before everything started peeling right off.  Nothing sticks to this thing!  At least, not so far…

If you have a regular old pan, I suggest using some cooking spray. I do when I use other pans or muffin tins. I wanted to test this bad boy’s capabilities.

I poured the entire carton of egg on the pan and seasoned then with salt and pepper and a healthy dose of Cayenne – I wouldn’t use this much for myself but Hubby loves heat.

I love green onions in eggs an I have a ton cut and frozen in a Parmesan cheese container from these so I added them.

Put the eggs into a 350 degree oven for about 15 minutes.

I highly recommend using these foil squares – so handy!

We get them from Sam’s Club (and you can get some on Amazon) and I think they’re actually a pretty good deal if compared to aluminum foil.

I used to use plastic wrap, but it was such a pain and Hubby had to remove that before microwaving anyway, so foil works just as well.

While the eggs cook, set up the foil, English muffin, sausage, and cheese assembly-line-style.

The single slices of cheese tend to melt really well so it works better to have a smaller piece to avoid a big mess after microwaving. It must have something to do with freezing because a whole slice is perfect when making them fresh. I use a quarter of a slice on each.

Check on the eggs every once in a while and when they look like they’ve set take them out – mine took roughly 15-20 minutes. If you look closely you can see the spots that started to bubble up from the bottom, a good indication that they’re done.

I divided the pan into five rows of three and let them cool a bit before putting the sandwiches together.

Try to let the eggs cool so they don’t turn the sandwich into a soggy mess.

There you have it! Fifteen sandwiches, enough to last three work weeks.

Save the muffin bags and put the sandwiches back inside. This is another reason the foil works better than plastic wrap, no sticking to the bag. I fit seven in one and eight in another, and froze the bag with eight and put the bag of seven in the fridge.

The whole process may have taken about an hour, but you can do other things during the fifteen minutes of cooking time and the fifteen minutes of cooling time.

I wanted to do the price comparison per sandwich to the pre-packaged (I don’t think it’s a huge difference), but couldn’t gather all the prices. Here’s what I do know.

GV Muffins $2.28 for 18
GV Egg Substitute $3.88 for 15 egg patties
GV Singles Cheese Slices ? Used 4 slices
Aldi sausage patties ? $4ish I know it was less than the GV we used to get and there were 18 in the package
Onions I consider free. I paid for them once but this was the second time they had grown – so free!

    I also saw the idea of cooking eggs in a muffin top pan. It makes them just the right size rings for the sandwich.

    1. Thanks! I’ve been looking for a pan like that. I’ve made them in my muffin pan and it makes the eggs too small and high, so I score a little X into the bottom of the egg and that helps it spread out a bit.

    2. We also use a muffin pan for breakfast sandwiches. I use one that makes for 12 muffins and it is perfect for English Muffin Breakfast Sandwiches. I hear you can use a pan for 6 (larger ones) if you want to make them for Bagels, but never tested it. I’m not sure how well that would work out, as I heard of that from word of mouth. We put different veggies like a tablespoon of sautéed Green Bell Peppers (diced), or put 2 – 3 blanched Spinach leaves in each. I can imagine 2 to 4 sautéed Mushroom slices would also work, I’m going to try that next Friday (March 14th ’14), with a little bit of Black Pepper and a dusting of Paprika at the end.

      Also, if you have a favorite restaurant recipe, add a tiny bit of those items to the egg mixture and it MIGHT work, but I can’t make sure it will. Maybe if you like Mushroom and Olive pizza, see if 1/2 diced bottom Mushroom Cap and 2 quartered black olives work. If you have a favorite shrimp recipe from a restaurant, add 2 items from that and it MIGHT work too. I can’t be positive, but it might work. I know maybe adding sautéed shredded shrimp MIGHGTt be good. Make sure to cook and shred the shrimp first.

      I should know the answer, but I make these for my husband. His answer was 48 second (what!?!) on each side if not frozen and 1 cycle of defrost on each side before 48 seconds each side if frozen.

  7. I’m so excited to find this! My husband and I are notorious for stopping and grabbing a fast food or gas station sandwich before work. This will definitely save us A BUNCH of money! I’ll probably buy the GV sausages though, because my closest Aldi is now a 20 minute drive 🙁 The gas cost really outweighs the savings. Quick question: are the GV frozen sausages in a bag like this too with the breakfast food?

  8. Worked in a 7-11 type store years ago and we made mcmuffin type sandwiches. To do eggs used meduim size styrofoam cups with very light oil in bottom covered and microwaved. Fit the muffin perfectly and you can reuse the cup.

    1. My husband does a auto defrost cycle and under a minute in the microwave after that. I say, play around with your microwave and see what works the best – the most important thing is to do whatever works to keep the muffin from getting soggy. I haven’t played around with it myself because I don’t eat english muffins. That, with the differences in microwaves, makes it really hard for me to give the best advice here – sorry I can’t be more help!

  10. LOVE the idea of baking the eggs! Just did this today with the English muffins, a square of cheese and a slice of canadian bacon. I used regular eggs, whipped with my immersion blender, then I cut them into rounds after baking. (I ate the scraps left over from cutting for lunch!)
    I also baked eggs with precooked sausage and precooked bacon and cut them into strips for breakfast burritos. You just add some cheese, precooked hash browns and some green chili (if you are from New Mexico!) on top of a tortilla. Wrap eggroll style and freeze.

I’ve thought about toasting the muffins, but it was an extra step that I didn’t feel like adding and I wasn’t sure if it would make much difference after freezing and reheating, my husband didn’t complain or suggest it so I took the easy route! I don’t cook the sausage either – right out of the freezer and on to the sandwich!

    2. I pre-cooked the sausage and also toasted the muffins. Well my husband toasted the muffins while I was cooking the sausage, I just wanted to brown them up a little before putting them on the sandwich.

  11. How about cutting out the eggs with a muffin-sized cookie cutter or a glass for that matter. They would fit right on the muffin and you could put the leftover edge pieces in the fridge for snacks.)

  12. Do the eggs react nicely in the microwave? They keep a good consistency? (I imagine they might get soggy and floppy?)

  13. I’ve made these sandwiches with bagels before, I use the smaller pyrex measuring cup (with sprayed oil) to microwave a scrambled egg. works great too!

      1. I keep it easy and don’t toast the English muffins, but I’m sure a lot of people may prefer to add that extra step.

    1. I am also diabetic and I have a home made breakfast sandwich almost every morning. I use whole wheat English muffins to keep sugars level. I add spinach to the eggs when cooking for a veg and if I have some tomatoes on hand I’ll top the sandwich with that too (I wouldn’t recommend freezing the tomatoes on the sandwich). Keep the protein high and fat low by switching sausage rounds with ham.
      Keeps me full and level until 10am if I eat at 7:30am.

  14. I just made these today. I took the suggestion of using a cup to cut the eggs, they were the perfect size for the sandwich! I used the leftover egg and made breakfast burritos also. Now I have 10 sandwiches and 10 burritos in my freezer that my husband and kids can grab for a easy breakfast. I am pretty sure next time I will be making a double batch! My husband said the sandwich tasted just like a Egg McMuffin from McDonalds.

  15. For about the same price, you can get already cooked round scrambled egg with cheese patties at Walmart that are pretty good. You could still top them with your onions and seasonings.

    I have several of the American Pans. They are great ,but don’t put fruit in these bans. I put in the cake and it took the coating off. I contacted them and they sent me another one. I don’t like that because I make a lot of things with fruit in them.

  17. I make both the sandwiches and burritos for my grandchildren each summer when they come to visit and they love them. I use egg, cheese, either sausage or ham. I toast the English muffin and put just a little pancake syrup on each. I’ve found that wax paper is good to wrap them in because it can be used in the microwave safely. I then put them in freezer zip lock bags. I also make extra pancakes about 4 inches across, put two or three in a fold top sandwich bag and then into the freeze zip lock. Heat in the micro 30 to 60 seconds depending on your microwave.

  18. My mom use to make these for me when i lived at home. They’re fabulous! I wrap them in paper towels so the egg doesn’t dry out in the microwave and that’s how the store brand sandwiches had said to cook them. Great on bagels and with bacon. Mix veggies into the eggs too! Also done french toast style ones with the make sausage and eggs.

  20. I am so glad you posted this and I found it! This is exactly the kid of thing my family has been wanting. I made enough for all 3 kids plus my husband to have one every morning for a 5 day school/work week. So, we’ll see how they go over and tweak them when I go shopping next weekend.   21. i’ve tried making a couple different recipes of this, and each time they were absolutely disgusting. i REALLY want to be able to make these for my boyfriends’ breakfasts. it seems to be the eggs that are the issue. i first baked them in a muffin pan, and then another recipe on a sheet like yours. but they are ewww eww gross! they even smell yuck and each time have either greyish or greenish color in places. any suggestions???

    1. I haven’t had an issue with them changing color or smelling any different than eggs… Hmmm… I use egg substitute and the only issue I have is that they can get a little wet, so I make sure to let them sit and cool before assembling the sandwich. I can’t figure out what the problem could be. If you wanted to take the extra time you could cook them up four at a time in a pan on the stove instead. Wish I could help more!

  22. i’ve tried a couple different recipes on these, and both times, they were not edible! the eggs come out absolutely disgusting! the first recipe was in a muffin pan, and the second on a sheet as yours are. but the eggs smell gross, look greyish or greenish in places, and just stomach turning when you try to eat them. have you heard of this, or have any suggestions? i really want these to work!!

  25. I sometimes make something similar for dinner when Dad is out of town. I use canadian bacon or turkey sausage to keep the fat down… but I never would have thought to make the eggs in a sheet pan. Great idea – so great to have breakfast “done”, right? Happy SITS day:)

    1. I love the idea of using Canadian bacon! I use turkey sausage if I were to make them for myself, but my husband is very resistant to healthy eating, so I haven’t converted him with breakfast yet. Baby steps!

    1. It really doesn’t take too long and last nearly a month, so it works for us since he’d buy one at the gas station if I didn’t – yuck! They’re so customizable too – I keep sneaking in small ways to make them a little healthier – so far I’ve beefed them up with some peppers and ground flax in the eggs – next I’ll work on that sausage!   28. I have never used the liquid egg product before. Everything I am seeing in stores is made with egg whites. Is that the same as what you used?

    1. I think that is pretty much what they all are. I just use them because it’s quicker thank cracking about 2 dozen eggs, but there is no reason not to scramble up a bunch of real eggs and use them!

  29. I made these tonight, I baked the eggs and used my biscuit cutter on them, it worked out great, we even baked the half slab of bacon that was left for a few of them. I found the english muffins at Aldis for $1.29, and the sausage patties were $4.99, so over all pretty inexpensive, we ate a couple for dinner tonight, they were good. I’m a school bus driver, so these will be perfect for mornings we are running late. I wrapped them in wax paper, and I think i can just stick the whole thing in the microwave, but will have to experiment with that.

  30. Are the sausages cooked first or still frozen?

    Also, I don’t have a microwave, so can you guess how you might warm these up in the oven?

    I really would like to try these for a better breakfast on busy mornings.

    1. I use precooked sausage patties but assemble them frozen. I think your best bet could be to play around a bit with taken the buns off and hearing up the middle and then adding the buns back in the end. I really have no clear-cut, perfect way to microwave them either – I just suggest playing around and watching g them to see what works best for you.
