For today’s Sunday Shortcut, I’m sharing a go-to meal that I love for so many reasons:
- It keeps the kids entertained and involved during meal prep
- It’s a great way to use up leftovers
- You can use anything you have on hand
- Helps get the kiddos to eat their veggies
- Quick and Easy
- A big hit with the whole family
We love this meal! I plan it for anytime that I have leftover veggies to use up. Instead of having little ones trying to get my attention while cooking, they help prepare their own dinner, and they always gobble it all up!
Make-your-own flatbread pizzas is the best quick and easy go-to dinner!
We always keep some flat wraps on hand, but you could also do this with tortillas. I pop them in a hot oven for a few minutes while I’m prepping any ingredients we can find. We use leftovers, frozen veggies, canned mushrooms, and anything else that appeals to us. I will open a jar of sauce or make our own with a can of tomato paste.
Once the wraps are crispy, I give the kiddos a couple spoons and lay out the ingredients before them and let them have at it. They love it! It also gives me some time to work on individual pizzas for my husband and myself.
They cook up really fast, we just watch them until the cheese melts. That is why it’s so important to crisp up the wraps ahead of time, they don’t cook long and the veggies just get wetter so it’s pretty impossible to try to crisp the crust with the toppings on.
You can use anything you’d like. I let the kids pick, which is why my little lady has peas all over her pizza. Fine with me! Add those veggies!
Oh yum! This is a great idea – and one that my husband could totally get behind. (My normal quickie dinners involve kitchen-sink salads, which he’ll eat, but isn’t all that thrilled about). I’d probably throw on whatever toppings we had available, hopefully including some heirloom tomatoes since it’s the season! 🙂
