Whether you’re looking for a quick and easy meal for one, or a large, hearty meal for a group, this is something that is just as easy either way. It really is so simple it almost seems crazy to share this “recipe” with you!

Isn’t it the best when a meal is so easy it seems laughable, but it tastes unbelievable!? This is the perfect weeknight meal for busy families. We make it all the time, so I have to share it with you!

Easy One-Pot Asiago Chicken Sausage and Broccoli Pasta!

I love an easy go-to weeknight recipe. There’s a reason it’s one of the top questions in our Mom Life Interview Series! There’s also a reason I put this one-pot asiago chicken sausage and broccoli pasta as my favorite. It’s the perfect weeknight meal! Not much fuss, not many dishes, and so yummy!

I’ve been making this forever…

…way before I had any idea how to cook – so you know it’s easy!

This recipe came about because I was living alone in grad school and had just started Weight Watchers. I had never really been much of a cook up until that point. So, I was trying to find something easy and tasty.

This is it! It satisfied my pasta craving, but with enough broccoli I was able to fit it into my day often on Weight Watchers. Pasta is a bit of a splurge, but it’s the ultimate comfort food for me.

Just as quick to make for a family as it is for one!

For one

When I was lived alone and I made this recipe for one, I would use 1.5- 2oz of spaghetti, a couple cups of broccoli, 2 tsp of olive oil, salt, and pepper. It all went into the pot and was cooked at the same time. Once I added the olive oil, salt, and pepper, that was it! Couldn’t be easier for someone living alone!

For ten

When I make this recipe for a family, I keep it super simple with a full package of spaghetti, a 5lb frozen bag of broccoli, and two packages of Spinach and Asiago Chicken Sausage. That way, I don’t have to measure and we have enough for two full meals.

So simple!

This recipe couldn’t be easier! I have made it with everything in one pot before, so it is possible! However, it’s just as easy to cook and brown the sausage in the toaster oven while the noodles and broccoli are cooking.

Just pull everything from the freezer and the pantry

This is the ultimate easy, go-to weeknight meal for me. So, I like that we can have things on hand that can go right from the freezer or pantry to the table in no time. You are more than welcome to use fresh broccoli. I would just reserve the cooking of it until after the pasta has gone in instead of before.

Spinach Asiago Chicken Sausage – or any sausage flavor…

The key ingredients here are the Spinach Asiago Chicken Sausage and an enormous bag of frozen broccoli. The reason I use the enormous 5lb bag is because I like to cook enough to make two full meals for our family of four (sometimes five).

If you haven’t tried Spinach and Asiago Chicken Sausages, you’re missing out! They are so delicious. We find them at Sam’s Club and I’ve been obsessed with them since grad school – probably over a decade!

Even if you don’t have a Sam’s Club membership, there are a lot of great chicken sausages out there. I crave the Spinach and Asiago Chicken Sausage, and think it makes the meal, but this simple recipe will be equally as delicious with another sausage flavor. With something this easy, the possibilities are endless.

Making our One-Pot Asiago Chicken Sausage and Broccoli Pasta

When I make this recipe – which happens at least a couple times a month – I have the steps down pat.

First, I pull the chicken sausage out of the freezer. It doesn’t come frozen, but like I said, I love to have everything on hand at all times so the sausage goes in the freezer after the store.

I grab some pop-up foil sheets and quickly line the pan in the toaster oven. A toaster oven is definitely quick-cooking must-have! I use it way more than our oven. It toasts, broils, and our new one is an air fryer! Anyway… I drop the sausages on the tray and let them go until the rest of the meal is done.

Next, I start the water boiling in my pasta pot. I have loved my cheapo pasta pot forever, and I’ll never give it up! The lid locks in place so you can just dump the water out and keep everything in the pot! I don’t know if they make mine anymore, but it’s similar to this with the strainer in the lid. Although, I would love one like this because it wouldn’t let all the steam out since I also steam veggies in this pot.

If you don’t have a pasta pot, you can use any pot that is large enough. You can always drain in a regular strainer, but this meal is all about being easy! So, I would recommend getting one of these clip on strainers. I have one that I absolutely love and use all the time. Less dishes is always a plus!

When the water is boiling, I first dump in the bag of frozen broccoli. This will cool off the water pretty quickly. I wait until it has returned to a boil (or nearly) and add the pasta.

Do you always break your pasta noodles before cooking them? It helps so much with little kids! This is why I love the bagged pasta because you can break them all right in the bags. No pasta pieces flying all over!

When the pasta is done, I drain the water from the pot but don’t worry about getting every last drop. A little pasta water is always nice in a big dish like this.

To finish everything off, I add in 1/4 cup of olive oil, a tablespoon of salt (remember this will serve about 10), and 2 tsp of pepper. To be honest, I never measure, but I did this last time and this seems about right. The kids love to top their bowls with a little Parmesan cheese and my husband will add some Parmesan and hot sauce – he puts that on everything.

One-Pot Asiago Chicken Sausage and Broccoli Pasta

Ingredients

  • 1 14 oz package of spaghetti noodles
  • 1 5 lb bag of frozen broccoli florets
  • 8 Spinach Asiago Chicken Sausage
  • 1/4 cup olive oil
  • 1 tbs salt
  • 2 tsp pepper

Directions

  1. Using a pot large enough to hold a pound of pasta and 5 pounds of broccoli, bring water to a boil.
  2. Cook sausages according to directions in the toaster oven for a nice brown skin. To keep it completely one-pot, you can also add the sausage to the pot of boiling water when you add the broccoli.
  3. Add the entire bag of frozen broccoli to the pot.
  4. As the water comes back up to a boil, add the package of spaghetti noodles and cook according to directions.
  5. Drain the water. More on how I drain the water while keeping everything in the pot below.
  6. Add olive oil, salt, and pepper. This also tastes delicious with a little minced garlic or garlic powder.
  7. Stir everything together and serve! Optional: top with a little grated Parmesan – our kiddos love it!
