Overnight oats are one of my absolute favorite make-ahead breakfasts. They are so easy to throw together at night. They are extremely convenient to grab in the morning. Plus, they give you that cozy, delicious feeling.

My absolutely favorite go-to recipe for overnight oats is this Peanut Butter Banana Overnight Oats recipe. I almost never deviate from this recipe. The banana and peanut butter add all the sweetness and it’s delicious!

However, this Animal Cracker Overnight Oats recipe came about because of a new probiotic we found for the kiddos. They are a vanilla chewable that tastes like vanilla animal crackers!

Does anyone else have kiddos who complain about stomachaches quite often?

Mine always have, and it’s so frustrating because they can’t recognize the source of the problem or describe it in a way that let’s us parents help them.

It can feel really unsettling. You want to help your poor kiddos, but you have no idea how.

Now that our kids are 7 and 8, we’ve gotten a better idea of how to help with these tummy aches. For my 8-year-old, they were usually related to nerves and that seems to have gotten better over the years. For my 7-year-old, we still have times where we think it’s constipation that usually persists for a few days or a week.

I wish we had found a kids probiotic to take regularly when they were younger! Probiotics help maintains good bowel regularity, relieves occasional digestive discomfort, and promotes healthy immune function. We have tried many different kids probiotics before, but they have never liked the flavor.

Animal Cracker Overnight Oats

These overnight oats are so easy. Basically vanilla overnight oats with a little addition of strawberry yogurt as the icing on the top! Looking back at it, all mine is missing is a little sprinkles!

Overnight oats are insanely easy. For this recipe, all you need are oats, milk or non-dairy milk, chia seeds, and vanilla protein powder.

Start with your oats and the vanilla protein powder of your choice. I think it all blends better when you have the protein powder mixed with the oats before pouring in the milk.

Next, add a tablespoon of chia seeds. Then, add your liquid. Vanilla almond milk is great for this because it adds to the vanilla flavor, but any milk will do. An optional addition is a little vanilla extract. I’ve also seen recipes that add a little cinnamon, but it wasn’t my favorite.

Once everything is mixed together, keep it in the refrigerator until morning.

Cold or hot?

I have heard of a lot of people who will grab these on the go in the morning without heating. I’m not a huge fan of cold oats. Although, I can say we did keep them cold when adding the strawberry yogurt on top and it wasn’t bad cold.

However, if you’re like me, feel free to warm them up in the morning. That’s what makes them such a cozy breakfast to me!

If you want this to look like a frosted animal cracker, add the strawberry yogurt on top and your favorite animal (cracker). This makes it a little more fun for kids, especially if you have some sprinkles!

In full transparency… I had to double this batch to make such a big jar of oatmeal. I love these with the handle! Normally, even for myself, I get full on about half this much. So, that is what you’ll see in the measurements below. However, if you got the 8 oz jars or 10 oz jars, you could make them look full like this.

Ingredients

  • 1/2 cup Rolled Oats (or quick oats)
  • 1 scoop vanilla protein powder
  • 1 tablespoon chia seeds
  • 1/2 cup unsweetened vanilla almond milk (or any favorite milk)
  • (optional) 1 teaspoon vanilla extract

Instructions

  1. First mix your dry ingredients together completely
  2. Add the milk and stir
  3. Refrigerate overnight
  4. Eat cold or warm 1 minute in the microwave
  5. Top with your choice of strawberry yogurt, animal crackers, sprinkles, granola, nuts, etc.

Notes

This recipe is doubled to fit the large, 16 oz jar in the photos.

The amount in this recipe is a better serving size and will fit in an 8oz or 10oz jar.
