This is a fantastic option if you’re trying to find something meatless that will appeal to everyone.

Maybe you have a vegetarian friend you’re entertaining. Maybe your kiddos aren’t big meat eaters. Or maybe you’re just trying to cut down.

Sometimes it can be so hard to come up with something without meat. I don’t know why that is! I find myself eating meals without meat all the time. However, when I’m trying to come up with something I hit a total mental block.

If you need an easy and delicious meatless option, this is it!

Parent Pro tip: If you have a kid who is always on the move or want something the kids can eat on the go outside, just leave this as a wrap. I like to use a foil sheet to wrap the bottom and send the kids back out the door!

Lunchbox Notes!

What’s a school lunch without a cute note from mom?

Along with labeling your kiddos lunch and school supplies with our absolute favorite, Mabel’s Labels, you can also leave them adorable lunchbox notes.

One of the main reasons we love our Mabel’s Labels so much is because they can go through the wash and never come off. Well, these Washaway Lunchbox Notes are the opposite – they’re made to come right off when you wash! How cute is that!?

Veggie Pinwheels Appetizer

I LOVE this for a party! First, Veggie Pinwheels are easy to make in large batches. Second, they are the perfect finger food. Third, they just look so pretty and colorful across a platter!

The best part is that you can make them assembly-line style and really save some time!

Cut all your veggies first. Spread your cream cheese across all your tortillas. Sprinkle each with seasoning, then sprinkle each with the veggies. Roll it all up and cut.

Hardly any more time than making one!

Easily make some Veggie Pinwheels in no time!

The best part about wraps and pinwheels is that they are so easy to assemble.

Adults can do it in no time. Kids can put them together themselves. You can start an assembly line to make enough for a party. So easy!

These Veggie Pinwheels take no time at all. The most time will be spent chopping your veggies, but there are a few ways you can cut down time on that.

Chopping veggies

Because you want your wrap to roll tightly, showing off all those pretty colors, you’ll want your veggies cut up pretty small. I like to either julienne them or just go for pea-size cubes.

Instead of cutting them by hand, you can use a mandolin slicer, grater, food processor, or chopper to speed up the process. Just don’t get them to fine or you won’t get that great crunch.

Veggie Pinwheel Assembly

Getting it all to stick

Once your veggies are chopped, you need to get them to stick to something.

By spreading cream cheese in a thin layer across the whole tortilla you create a base for all the veggies to stick together. This makes for a tight and pretty wrap and pinwheels that stay together.

I like to spread a thin layer across the entire tortilla while also noticing which end will be wrapped around the outside. For that portion, I make sure the cream cheese is spread even thinner to prevent oozing around the edge of the wrap.

After a sprinkle of Everything Bagel Seasoning (which makes Veggie Pinwheels so special!) spread your veggies evenly over the wrap.

The exception is that one outside edge because your pinwheel will stick together better without veggies on that last 2 inches or so. (See the above photo)

Try to press everything lightly into the cream cheese to make sure it’s secure. This will keep the small bits of vegetables from dropping out of your pinwheel when cut and eaten.

Veggie Pinwheels variations

You can do so much with these Veggie Pinwheels to make them your own! Depending on your favorite vegetables, you can add whatever you’d like.

The key is to get all your pieces around the same size.

These also look fantastic with different flavors of wraps. I love the green of spinach wraps and the red of tomato basil wraps.

Last, if everything bagel seasoning and cream cheese isn’t your thing, a good vegetable dip is a perfect glue for these Veggie Pinwheels.

For a lighter version, try a light cream cheese. A regular hummus or flavors such as roasted red paper, spinach and artichoke, and sun dried tomato would be delicious. Even soft Laughing Cow cheese wedges would work great. They have amazing flavors like Swiss Garlic & Herb, Spicy Pepper Jack, Swiss French Onion.

Just use what you have and you can’t really go wrong!

Our Veggie Pinwheels

This recipe is a classic example of using what you have.

While making these for our kiddos’ lunches, we had carrots, broccoli, and tomato. They turned out to be one of my absolute favorites out all of our Pinwheel Sandwiches for School Lunch.

If I were making them today, I would use all the veggies I could and keep it very colorful! Broccoli, Cauliflower, bell peppers, carrots, and maybe even a bit of avocado. Yum!

Anything goes.
