Learning about Olive Oil

Moms Meet even had a virtual summit all about this 100% Extra Virgin Olive Oil.

I learned about the history and how it is made it Italy. I also learned from a professional how to taste different olive oils and what they are best used for.

Best of all, I learned how to make risotto from an amazing Italian chef!

It’s always been one recipe that intimidated me a little, but with what I learned in that video and with the rice and oil from Le Stagioni D’Italia, I’m going to give it a try!

Choosing the Right Olive Oil

As I mentioned, during the Moms Meet Flavor Life Italian cooking class, a very knowledgeable Italian olive oil specialist, Alissa Mattei, gave a demonstration about what to look for when tasting olive oils.

I found it interesting to learn that a pungent, almost bitter taste is indicative of a great olive oil for healthy cooking. It has all the amazing health benefits and polyphenols with antioxidants.

These oils have a more robust flavor and pair great with steak or a spicy soup.

They also retain their benefits longer, because sweeter oils will become victims to oxidation within a few months.

You might like a lighter extra virgin olive oil for healthy salads and dipping. Delicate oils are great for lighter foods such as vegetables, fish, or potatoes.

The takeaway is to use lighter oils more quickly to retain health benefits, and use more pungent olive oils for cooking healthy, hearty meals.

Le Stagioni d’ Italia

The 100% Extra Virgin Olive Oil we received is from Le Stagioni d’Italia which actually means “the seasons of Italy.” It represents the connection to nature and land.

As I learned from the expert, this 100% Extra Virgin Olive Oil has a robust flavor of artichoke and almond, with a medium bitter and spicy aftertaste, as well as a green, ripe, fruity aroma with a leafy feel.

Cooking healthy meals with Olive Oil

I love olive oil because it’s a heart healthy oil that adds so much flavor. You can make a delicious meal without a lot of extras if you’re using a good olive oil.

A go-to in our house is roasting veggies.

If I’m using the oven, you can bet I also have some kind of veggie roasting up in there with some olive oil, salt, pepper, and garlic. That’s all you need!

I love olive oil for cooking healthy meals, and I could eat a bowl of roasted veggies for every meal.

I’m a huge fan of how easy a sheet pan meal is.

Whether it’s roasting a pan of broccoli or zuchinni (both of which I’ve done in the last couple weeks), or making a full meal of potatoes, sweet potatoes, onions, broccoli, cauliflower, carrots, and smoked sausage all on one pan (which I’ve also done this week!) – a good olive oils is all you need for easy, healthy cooking.

Chicken and Mustard Casserole

We have a new favorite meal in our rotation. It’s so easy for Mom, and it’s eaten by everyone. That’s a win!

Along with the fabulous olive oil and risotto rice, Flavor Your Life also sent along some amazing recipe inspiration.

We’ve now had this Chicken and Mustard Casserole twice.

It’s a hit with the whole family. Even our daughter who doesn’t do mustard or mushrooms. Go figure…

The best part about this recipe, is that it’s actually really easy!

You just need 90 minutes to bake the boneless, skinless chicken thighs and mushrooms with the super easy mustard sauce. It comes out so great!

Both times, I also used this olive oil for my absolute go-to for cooking veggies. I roasted zuchinni the first night and roasted broccoli the second.

You can’t beat a great olive oil and some salt, pepper, and garlic and a sheet pan to make the tastiest veggies ever!

Yield: 12 servings

Chicken and Mustard Casserole

Chicken and Mustard Casserole with roasted zucchini

Easy tender chicken thighs in a tangy mustard sauce. Easy to prepare in advance for your family or a dinner party.

Prep Time 15 minutes
Cook Time 1 hour 30 minutes
Total Time 1 hour 45 minutes

Ingredients

  • 12 boneless and skinless chicken thighs
  • 12 oz brown cap mushrooms
  • 2 tablespoons Extra virgin olive oil
  • 2 tablespoons tomato ketchup
  • 2 tablespoons grainy mustard
  • 1 tablespoons yellow mustard
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcester sauce
  • 1 tablespoon red wine vinegar
  • 2 cloves of garlic
  • (optional) 2 tsp fresh tarragon

Instructions

    1. Preheat oven to 350 degrees.
    2. Slice mushrooms.
    3. Place the chicken thighs and mushrooms in an oven proof casserole dish.
    4. Place the olive oil, tomato ketchup, mustards, brown sugar, Worcester, garlic, and vinegar in a small bowl. Mix the ingredients together and pour over the chicken.
    5. Cook for 90 minutes.
    6. (Optional) Chop and scatter fresh tarragon over the chicken just before serving.
