Well, another summer has flown by!
We’ve been preparing for school to start again for the last couple weeks.
It makes summer seem so short because preparing for school seems to start earlier and earlier!
Our Little Guy, who is staring middle school – what!?! – has checked out his new school, tried his locker combo about 20 times, and walked his schedule.
The school supplies are purchased, organized, and labeled. We’re wrapping up summer activities, spending our last week at the cabin, and starting to get back into a routine.
Back-to-School Routine
This year, both kiddos will be starting school at different times. We have had a pretty steady morning routine for the last 4 years, but this will change things up a bit.
Luckily Little Guy is my early riser, because he will be heading out the the bus at 7:30 which is the time we used to have breakfast. Little Lady will likely just be getting up and ready to start her breakfast while he’s heading out the door.
I’m sure we’ll settle into a new breakfast routine pretty quickly, but it will be different!
Sambucol Black Elderberry
One major part of our breakfast and back-to-school routine is to make sure we’re ready to battle all the school illnesses and stay as healthy as we can with vitamins and supplements. Along with a multivitamin, the kids take an elderberry gummy. They will tell you it is one of the highlights of their morning routine. They will also tell you that Sambucol is their absolute favorite – they have tried many but these taste the best!
Back when the kiddos were doing distance learning, we got in the habit of starting the day with a water bottle filled with the Sambucol Black Elderberry drink mix. We also like to add it to things such as a yogurt parfait. Recently, with our Mickey breakfast, we used it to make a peanut butter and jelly chia pudding. It was a big hit!

Mickey Breakfast
Who doesn’t love Mickey shaped things, right? I know our Disney-loving family will always get excited about a hidden mickey, or anything Mickey shaped.
So, what better way to share a Disney surprise, and test out some back-to-school breakfast ideas, than with a Mickey Breakfast?!

Mickey Breakfast Fruit
One of the easiest ways to add some variety and color to a Mickey Breakfast is to make some Mickey shaped fruit.
If you have a Mickey cookie cutter – or a variety of sizes like I wish I had – you can easily make some adorable Mickey fruit shapes. I used our Mickey cookie cutter to punch out some cute Mickeys out of cantaloupe. It would also be pretty easy to do with watermelon.
With a smaller Mickey cookie cutter, you could even make Mickey shapes out of peaches, pears, apples, or kiwi.
Since our Mickey cookie cutter is larger, I ended up just using a knife to make our kiwi Mickeys. I cut the kiwi into slices and cut some smaller pieces for the ears. With even smaller fruit like grapes or blueberries, you can just pick different sizes and arrange them in a Mickey shape for a very cute and easy Mickey breakfast touch.
Mickey Bagels
Anything round can be turned into a Mickey! For our Mickey Breakfast, we had mini bagels and larger french toast bagels, so I just toasted them up and plated them in a Mickey shape. Just about the easiest Mickey Breakfast idea you can think of!
Mickey Toast
With that same Mickey cookie cutter, you can make adorable little Mickey toasts.
There are two ways to do this… Cut the Mickey shape and discard the crust. Or, you can use the cookie cutter to punch a Mickey shape right into the bread. Then, while toasting, it will begin to stand out a bit more. That way, there is no waste, but it does have a little Mickey breakfast flair.
Do you know there is a Mickey sandwich maker? You could put together a breakfast sandwich – or just two pieces of toast – and it will grill a Mickey face into your bread!
Mickey Egg in a Hole
I will admit, this was a bit of a fail for me, but I know it can work and I know it would be cute!
If you did cut out your Mickey toast and have the outside edge of the bread left, you should – in theory – be able to make a Mickey Egg in a Hole. Just place the bread in the pan and crack the egg into the middle of the Mickey shape.
This is not something I make often, so I could use a bit more practice than I had time for while throwing this Mickey Breakfast together for our Disney surprise. I might try it again. Maybe I’ll pop the lid on the pan for a little bit to set the egg before I flip. Hopefully that will keep the adorable Mickey egg shape.

Mickey Waffles and Mickey Pancakes
I mean, I have to mention these! Mickey waffles and Mickey pancakes are definitely standard for a Mickey breakfast.
If you’re looking through these photos and trying to find them, you won’t have any luck. This Mickey breakfast is sans Mickey waffles or pancakes, unfortunately. I have been looking for the right Mickey waffle maker, but can’t decide between these classic Mickey waffles or this style.
Luckily, Mickey pancakes are pretty simple. Just make a normal pancake and pour the ears before flipping. We had enough bread with our meal, but Mickey pancakes or waffles will likely make an appearance at our next Mickey Breakfast.
Mickey Yogurt Parfait
I love a yogurt parfait! This was an easy greek yogurt, granola, and blueberry parfait. Because of the greek yogurt, I added a little bit of Mickey red sprinkles to the top for added sweetness and fun! Plus, an easy blueberry Mickey.

Mickey Breakfast Peanut Butter and Jelly Chia Pudding
I had a secret agenda making this Mickey Breakfast. Yes, we have a Disney surprise for the kids – are you wondering what that is yet? – but I’m also interested in trying new breakfast ideas before they go back to school.
I’ve always wanted to try making Chia Pudding. Ever since we got some Sambucol Black Elderberry Syrup, I’ve thought this would be a perfect use for it!
The recipe for this first try a Chia Pudding, is pretty simple! Just a tablespoon of chia seeds a tablespoon of milk, a teaspoon of peanut butter, a teaspoon of honey, and a teaspoon of elderberry syrup. Mix, and let set in the fridge overnight. To make it fit into our Mickey Breakfast, I plopped a Mickey on top with three blueberries.
Mickey Energy Bites
Energy bites are already a big hit with our kids. They are a regular on our healthier snack list and we’ve been trying to make them a bit more lately. It’s a great treat, snack, or breakfast that the kids get excited about.
It’s such an easy snack to pull together and includes oats, peanut butter, flaxseed, honey, and chocolate chips. (We basically do something like this recipe, but I’ve found it helps to give the peanut butter and honey a little time in the microwave to melt a bit and better mix into the oats and flax.)
For a Mickey Breakfast, you can just roll your regular energy bite ball and two smaller ones for the ears. I didn’t even bother to try to get the ears to stick, but just stuck them on the plate in a Mickey shape and gave them a little push.
This is one of the things the kiddos reached for first. I might look into ideas similar to this to have on hand for breakfast, after school snacks, or treats. Maybe we’ll try something like this recipe with a bit of added coconut.

Mickey Breakfast Disney Surprise
So, why this Mickey breakfast? The practical reason for this breakfast was to test out some back-to-school breakfast ideas on the kids.
I’m very excited chia pudding was a hit! I can’t wait to prep a couple of these and try out different flavors!
While my back-to-school breakfast ideas have grown, the kids got a Disney surprise. We’re a Disney loving family anyway, so they loved the Mickey shapes and I might do that again on a school morning just to start the day with a smile.
During our Mickey breakfast I shared with the kids that we have a Disney trip booked! In January, not only are we going back to Walt Disney World, but we are staying at the Animal Kingdom Lodge in a Savanna view room!
