Sometime last school year, – Ok wait, I just looked back and it was only a few months ago! Where does the time go!?!

Anyway, the kiddos asked me for donuts for breakfast. I don’t really bake and we don’t often have donuts in the house, but I was tired of saying no. Also, I’m pretty sure we had a surplus of apples at the time.

So, I made a big deal about having a surprise for them and got everyone excited…

And, bless their little hearts, they thought it was wonderful when I made apples into donuts and gave them sprinkles for breakfast.

They ask for them all the time, and I’m very happy to oblige. They’re so easy! Plus, I can’t resist new healthy snacks for the kids!

I get about four slices – or ‘donuts’ – out of each apple. If I could find our apple corer, I would use that, but I just remove the core after the slices are cut. Very easy!

Then, just spread on the peanut butter and top with some sprinkles to make the kiddos happy. They love them!

Lindsay Almond Butter

A few weeks ago, we got an amazing package from Moms Meet full of Lindsay almond butter. Our kiddos have never been huge fans of any other nut or seed butter outside of peanut butter, but we all agree these are delicious!

They still have a bit of oil separation like other nut and seed butters, but no refrigeration is required! Best of all, they’re made with 100% Californian almonds and just a touch of honey.

The creamy almond butter is so smooth and spreadable – even better than our current peanut butter for spreading over fresh bread. There is also a chunky version which will be great for some recipes I have in mind – maybe some almond butter and banana overnight oats?

Our favorite flavor – and how can it not be? – is the Lindsay Honey Cinnamon Almond Butter. It’s amazing!

The second I tasted it, I knew I wanted to put it on our apple ‘donuts’ and it gave me another idea…

There is some magic that happens when you warm an apple. Mmm… It tastes just like an apple pie and has that apple crisp or apple crumble flavor when you top it with a little crunch.

Making Warm Apple Slice Donuts with Honey Cinnamon Almond Butter

Any apple will work for this. Our apple prices are a little crazy right now, so I picked up a bag of the cheaper Granny Smith apples. The slight tartness is great for combining with sweet almond butter.

If you have an apple corer, you can core the apple first and then cut your slices. I just turn the apple on it’s side and cut in half and then slice the two sections in half again. With the tip of the knife, I cut around the core and pop it out.

You can warm the apple slices any way you’d like – microwave, oven, stove, toaster oven… I use our toaster oven for everything, so that’s the route I go. I put the four slices in the toaster oven on broil for 10 minutes. This pulls out the yummy sugars, softens the apple, and leaves it just firm enough to pickup.

When I make quick apple slice donuts for the kids, I just spread the peanut or almond butter right on the slice with a knife. It’s not as pretty, but it’s pretty fast. However, when the apples are warmed, they aren’t as easy to handle.

For warm apple slice donuts, it’s easier to place some of the honey cinnamon almond butter into the corner of a sandwich bag and squeeze onto the apple slices through an open the corner of the bag.

Top with any topping you choose. The kiddos love sprinkles and I like hemp hearts, but you could use granola, chocolate chips, raisins, etc…

Little Lady and I both gobbled up our warm apple slice donuts. Even our bunny, Everest, was a fan because he got the apple scraps from cutting the donuts.

What you Need

What you Do

  1. Wash and core apple (if you have an apple corer, otherwise do as I mention above)
  2. Turn the apple on it’s side and slice in half. Do the same to each half and slice again until you have four circles.
  3. Place on foil (we love these foil sheets – perfect size for the toaster oven) and broil in the toaster oven for 10 minutes.
  4. Place 1 tbs (or more depending on your preference) of almond butter in the corner of a plastic sandwich bag to make a piping bag. Push the almond butter to the corner and snip the tip of the bag.
  5. Squeeze almond butter on the apple slice
  6. Optional: top with sprinkles for the kids or, my favorite, hemp hears for the adults.

Tip: Scoring the skin slightly before broiling help little ones bite through it easier while eating.
