Our family can’t get enough of this Ground Turkey and Green Beans Stir Fry! The most delicious way to eat your veggies and perfect for meal prep.
This recipe is a fantastic way to use those green beans from your garden, but is just as good with a bag of beans from the freezer. It also tastes just as amazing the second time around – maybe even better – so it’s perfect for leftovers or meal prepping. Our kids gobble this up, and it’s always good when the craving for Chinese food strikes!

Every year we try our hand at growing vegetables. I like to call it the plant and pray method. I never feel like I know what I’m getting! We’ve had success with different vegetables each year. However, we seem to be quite good at growing green beans. At least the past couple years… To be honest, I never have a clue what is going to take off each year!
Last summer was our first time planting in our gorgeous new planter boxes my dad built. They have a trellis up the back and our beans go crazy on it!
We had so many green beans last summer, that I had to get creative with our recipes so we could eat all the beans we were collecting and the kids were still happy to do so.
Our second favorite recipe is our Chicken and Veggies Sheet Pan Meal. Today, I’m sharing our absolute favorite meal with green beans.
Ground Turkey and Green Beans Stir Fry
This is a recipe our family can’t get enough of! The kids LOVE this meal, and I can always count on no complaints and second helpings. Plus, the leftovers are a favorite healthy option for Mom! This is such a perfect recipe for meal prepping because it tastes just as good the second time around.

I love a stir fry!
The flavors of the garlic, ginger, and hoisin take simple green beans and ground turkey to the next level! It’s the perfect easy meal for nights where the craving for Chinese food hits.
As with any stir fry, it’s relatively simple to make, but it’s a bit of a timing thing. This stir fry is more forgiving because there isn’t a lot of other food prep. It’s just about getting beans firm but tender without losing the green color.
I find that steaming the green beans just a bit ahead of time, really helps everything to finish at just the right time. In fact, when we’re not using fresh beans from the garden, I love to use a steamable bag of frozen beans to make it even easier.

Ground Turkey and Green Beans Stir Fry Recipe
Ingredients
- 1 lb ground turkey
- 2 lbs green beans
- 1 carrot, shredded
- 2 green onions chopped
- 2 tsp sesame oil
- 1 tbsp minced garlic
- 2 tbsp minced ginger
- 4 tbsp low sodium soy sauce
- 2 tbs rice vinegar
- 2 tsp chili paste
- 2 tbs hoisin
Directions
- In a wok or large pan, heat sesame oil
- In a separate pan or in the microwave, steam green beans a few minutes until they just start to soften
- To the wok, add garlic and green onions and cook about 2 minutes
- Add ground turkey and shredded carrot and cook until the turkey is mostly done
- Add chili paste, hoisin, and ginger and stir
- Add slightly cooked green beans and soy sauce
- Stir to coat and cook 7-9 minutes
- Last, add rice vinegar, stir, and cook for one minute
- Serve over rice

I like to cook a very large batch of rice so we have enough for this meal and another. We also love our rice with peas added in, so I often do that even though this meal is heavy on the veggies already. Rice and peas have just always gone together since I was young.
The kids have second helpings of this meal nearly every time we eat it. My husband and I put the leftovers into about 4 separate containers and we each have lunch for a couple days.
It’s great leftover! Perfect for people who meal prep!
