Everyone in our family are total Marvel fans and this mom loves to find new healthy recipes! So, with this easy recipe packed full of spinach, and calling them Hulk Muffins, this is a winning combo!
These Healthy Spinach Hulk Muffins have no food coloring, just an entire bag of spinach!
Even knowing they are full of spinach, the kids love them!
I mean, what kids can resist a bright green food!?
These muffins are very easy to make, so the kids have a blast helping!
Disney Food
We absolutely love anything Disney and Marvel! We especially love giving our recipes a Disney spin – in this case Marvel.
We are a total Marvel family. Even when the kiddos were very little and hadn’t seen the movies, they were into it. When I originally posted this recipe over 3 years ago, my son was 4 and the perfect age for getting into superheros.
Around the same time, I found a green muffin recipe from a blog that no longer exists. I’ve been looking for healthier options for when those dessert cravings hit. I felt inspired to alter the recipe a bit and get the kids excited by calling them Hulk Muffins.

Kids love to help with Healthy Spinach Hulk Muffins
The kids have so many opportunities to help with this recipe, and they have a lot of fun.
They can the liners to the muffin pan (although we don’t usually use them with the awesome pan below!). They love to mash the bananas. Kids can also stuff the blender full of spinach, poured the ingredients in the bowl, help measure, and they especially love to taste test the batter. Even with the spinach, this is a very sweet batter and has no eggs!
It’s so much fun to get the kids involved! Mine kiddos are used to spinach in smoothies and things, but they were thrilled at the bright green color of the batter!
My absolute favorite pans
I’ve raved about these pans when I’ve shared my Frozen Breakfast Sandwiches. I got a USA pan muffin tin for Christmas back when this was first shared. I was a happy lady!
Nothing sticks to these! I had some batter spills after baking the muffins and I just touched them and they popped right off, clean as can be! In fact, I don’t even use liners in this pan anymore.
I can’t say enough about them – all USA Pans Bakeware is great!
So, how do you get your little ones to eat a ton of spinach and get super excited because it looks so cool?
Make Marvel Avengers Hulk Muffins!
Healthy Spinach Hulk Muffins
What You Need
- 2 cups flour (use what you prefer or a blend)
- 3/4 cup sugar or sugar substitute (I used Monk Fruit in the Raw)
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup unsweetened apple sauce
- 3/4 cup milk
- 6 oz bag spinach (I had an 8oz bag I had used some from so it wasn’t exact)
- 2 mashed bananas
- 2 tsp vanilla extract
What You Do
- Preheat oven to 375 degrees
- Mix all dry ingredients (flour, sugar, baking powder, baking soda, cinnamon, and salt) and set aside.
- Add milk and spinach to a blender and purée until smooth. I added the spinach in about 3-4 batches so it would blend well and because I was using a blender for single-serving smoothies 😉
- Add mashed banana and vanilla extract and blend.
- Pour spinach mixture into the dry ingredients and fold together with a rubber spatula until completely combined.
- Fold in applesauce.
- Fill a 12-muffin tin with paper liners and fill 2/3 of the way with batter. (Mine were a little small the first time around and I had enough batter for six more muffins. Fill to your liking and it will make anywhere from 12-24, depending on your muffin size.
- Bake for 15-20 minutes, or until an insearted toothpick comes out clean.
I hope you try these out with your kiddos and that you have just as much fun as a family and the kids love eating them just as much as mine!

I do have to mention, we found that the spinach or “earthy” smell increased the longer we had them out. We just had them in a container on the counter, but I think I would recommend refrigerating them. I also think they would be great as a cupcake topped with a little frosting – what kid could resist that!?

I followed everything step by step and my flour of choosing was coconut, everything smelled great and I got that beautiful green color but when I did do the final step which was folding in everything, I noticed it was a little dried and not “cupcake” consistency and once I put in the oven and time was up, I noticed it didn’t rise. Can I have done something wrong?
Hmmm… Dorissa, I wish I knew what happened. I haven’t done much baking with coconut flour, but I don’t think that would make much of a difference. Did you remember to fold in the apple sauce after you can combined your wet and dry ingredients? That’s the only thing I can think of – it definitely would be dry if you missed that step.
Coconut flour behaves really uniquely. You generally can’t swap in for any other kind without major adjustments or additions. If your want to keep it simple, maybe a brown rice flour would do? Or Bob’s Red Mill 1:1 blend?
Coconut flour doesn’t swap equally. It’s super absorbent, Only use 1/3 of the amount called for if using coconut flour.
can you use frozen spinach?
Hi Shellie! I have only tried it with fresh spinach. So, I’m not positive how frozen spinach would work. However, if you feel like you have a good handle on how much frozen spinach would equal the fresh spinach, I think the only thing to worry about would be getting most of the liquid out before blending. It may be worth a shot! You’ll have to report back if you give it a try!
Any idea how many calories there are in each muffin. I have made them several times and they are yummy.

I am a big fan of the spinach, I make a smoothie from banana, kiwi, and spinach all the time and that’s my favorite. I need to try this as well, looks interesting.
